Peanut butter and chocolate are a match made in heaven. The rice krispies make these treats lighter and give added crunch. We’re still in Syawal so why not make some of these Chocolate Rice Krispies Peanut Butter Balls for family and friends.

Here’s what you’ll need:
- 1 to 1/4 cup icing sugar
- 2 tbsp butter
- 1 cup peanut butter
- 1 1/2 cups rice krispies
- 1 tsp vanilla extact
- 1 1/2 large bar of chocolate (about 300g), I used a mixture of both milk and dark chocolate
- 1 tsp vegetable shortening
Instructions:
Firstly, you’d want to line two baking trays with parchment paper. Set aside to be used later.
In a saucepan, melt the butter over medium heat, add the peanut butter and then add the vanilla.
Continue to stir until the peanut butter is fully melted and all the ingredients are thoroughly combined.
In a large bowl, mix the rice krispies with the icing sugar. Pour the peanut butter mixture on top and mix until well combined, using a wooden spoon or spatula. At one point I find it easier to mix using hand BUT make sure the mixture has cooled enough for you to tolerate the heat. It’s hot peanut butter mixture we’re dealing with!
Once perfectly combined i.e. no more icing sugar visible, form into small balls and place on the prepared baking trays. I find that half a tablespoonful is a nice size that you could pop into your mouth in one go. Refrigerate to set and hardened for a couple of hours. Some people suggest to freeze the peanut butter balls completely, but I find with this recipe at least, freezing them is not necessary.
When the peanut butter balls have hardened in the fridge, we can start to melt the chocolate. Using a double boiler or short bursts in the microwave, melt the chocolate and shortening.
Take out the chilled peanut butter balls from the fridge and dip each peanut butter ball in the melted chocolate using two forks and place them back on the baking tray.
Pop them back in the fridge to completely set.
My kitchen adventure today yielded 66 Chocolate Rice Krispies Peanut Butter Balls. Yums…
